Pork Loin Nuggets
Ingredients:
1 sleeve Ritz Crackers (About 30 Crackers)
1 Brown Egg
1 cup Water
1/2 tsp Mediterranean Sea Salt (Kosher or course salt)
1/2 tsp Fresh Ground Black Pepper
1/2 tsp Paprika
1/2 tsp Cayenne Pepper
1/2 tsp Ground Sage
1/2 tsp Ground Coriander
1/4 tsp Ground Thyme
1/4 tsp Garlic Powder
1 lb Pork Loin (The small type no bigger than 2 1/2" diameter.)
Preparation:
1. Preheat oven to 425 °F
2. Crumble the crackers into a large mixing bowl. No cracker pieces should be more than 1/16” - 1/8" square.
3. Combine the herbs and spices with the crackers.
4. In another bowl whisk together the egg and water.
5. Slice the pork loin into 1/2" slices or disks.
6. Place the pork, a few pieces at a time, into the egg mixture. Remove the pork from the egg mixture and tumble it in the cracker mixture.
7. Place the pork on a cookie sheet or piece of foil that has been sprayed with non-stick cooking spray.
8. Repeat until all the pork has been coated.
9. Bake for 15 - 17 minutes or until the internal temperature is 160 °F and the coating is a crunchy brown.
10.Serve with your favorite sauce.
